Classic Scone

Classic Scone Recipe
Makes: 8 scones
Prep Time: 15 minutes
Cook Time: 12-15 minutes
Ingredients:
- 2 cups (250g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/3 cup (75g) cold unsalted butter, cubed
- 1/2 cup (120ml) milk (whole or 2%)
- 1 large egg
- 1 teaspoon vanilla extract
For Brushing:
- 1 egg, lightly beaten, or milk (for a golden top)
Instructions:
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
3. Cut in the butter: Add the cold, cubed butter to the dry mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
4. Combine wet ingredients: In a separate bowl, whisk together the milk, egg, and vanilla extract.
5. Form the dough: Gradually pour the wet ingredients into the dry mixture, stirring gently with a fork until just combined. The dough should be slightly sticky but manageable.
6. Shape the dough: Turn the dough out onto a lightly floured surface and gently knead it 3–4 times. Pat or roll the dough into a 1-inch-thick circle.
7. Cut the scones: Use a round cutter (about 2–3 inches in diameter) or a knife to cut out scones. Place them on the prepared baking sheet, leaving about 1 inch of space between each.
8. Brush the tops: Lightly brush the tops with beaten egg or milk for a golden finish.
9. Bake: Bake for 12–15 minutes, or until the scones are golden and risen. Remove from the oven and allow to cool slightly on a wire rack.
10. Serve: Enjoy warm with butter, clotted cream, or your favourite low-sugar jam!
